add in the powders when you grind
them. If you heat the powders with the
whole spices, the powder will burn
before you get the whole spices roasted.
How do I know this? I made this very
mistake when conducting a spice-
grinding workshop with a dozen pairs of
eyes following my every move. It’s also
very helpful to first break up cinnamon
sticks, cassia or bay leaves, and whole
red chiles before processing them in a
grinder.
