This is a unique take on a wet masala
mixture. The story is that my
grandfather’s younger brother went on
a religious retreat in India, where he
was shown a preparation for what’s
now known in our family as Adarak
(Ginger) Masala. We typically use it
mixed with milk (Adarak ki Sabji, see
recipe on page 156), but I’ve realized
