Spinach-Stuffed Bread

This was the very first parantha my girls
got truly jazzed over. I’d make a batch
and they’d take them rolled up
everywhere—in the car, to the park,
and to school. It was the easiest way to
introduce my kids to spinach, a
vegetable they’ve loved ever since.
They especially love these paranthas
because they turn a funky bright green
after mixing in the food processor.

chapati flour (atta)
