My mom has been making this baked
take on a traditional fried Indian snack
for years. My challenge was to come up
with a vegan version that would forgo
the traditional yogurt. My first batch,
made without any yogurt or tofu
substitute, was too dense. Thank
goodness for silken tofu. It did the
trick, making for a healthy snack that I
can feel really good about feeding to
