Sprouts


Sprouting is the process of germinating
seeds, which when soaked and allowed
to sprout are high in enzymes and
nutrition. Keep in mind that you can
only sprout whole legumes. Once
they’ve been split or processed, you’ve
eliminated the seeds’ ability to absorb
water and grow. Whole green lentils
(sabut moong) are some of the easiest
and tastiest to sprout. My kids will eat
handfuls of them raw out of the fridge.
In India, sprouting is not seen as the
exotic tradition it is in the West; it’s an
everyday process, and sprouted salads
are commonly eaten.
