Sharon’s Veggie Salad Sandwiches

When I was growing up, my best friend
and neighbor Sharon Flynn and I loved
swapping cultures. I visited her house
across the street for a traditional
Thanksgiving every year, while she
would come over for Indian food. One
of our favorite pastimes was sitting on
my front lawn and making sandwiches
out of Indian-seasoned vegetables. I’d
get a huge plate filled with sliced
tomatoes, bell peppers, and onions
doused with lemon juice. Then we’d sit
there for hours, pile them up, and eat
them. Surely all the neighbors on
Anthony Road thought we were crazy!
