Dhokla is a delicious snack food with
roots in Gujarat, a state in western
India. The light, airy, steamed squares
are served with tea or as an appetizer
at a party and are traditionally made
with white rice and yogurt. I worked
hard to develop a recipe that
incorporated whole-grain brown rice
and soy instead. I tried using only
