  1. Pour the batter into the prepared pan.

  2. Bring some water to a boil in a
    double boiler wide enough to fit your
    square pan. Place the square pan gently
    in the top section of the double boiler.

  3. Cover the pan and steam for 12 to 15
    minutes. The dhokla is cooked when a
    toothpick inserted into the middle comes
    out clean. Remove the lid and let it cool
    for 10 minutes in the pan.

  4. Carefully remove the square pan
    from the double boiler.

  5. Slowly cut the dhokla into squares
    and arrange them in a pyramid on a large
    plate.
