Soy Yogurt Raita


YIELD: 1 CUP (237 ML)


Yogurt is a huge part of the Indian diet,
but not sugary and sweet as it is eaten
in the West. Indians traditionally add
spices like roasted cumin and black
salt to their yogurt, along with grated
and/or chopped veggies, making a side
of yogurt an incredibly healthy
addition to a meal. This is the most
basic recipe; feel free to add anything
and everything from grated carrots to
cooked and diced beets to diced daikon.
Though lemon or lime juice is not
traditionally added to raita, it helps
round out the flavor when using soy
yogurt.
