dishes, thinking that’s what their
customers want. In fact, this prevents
you from tasting the food. Sure, it seems
delicious while you are eating it. But
afterward, you feel bloated and slightly
uncomfortable—and let’s not mention
how you feel the next morning! Indian
food should be light, delicious, and
fresh. When I taught a class at a Sur La
Table in King of Prussia, Pennsylvania,
one participant remarked he’d never
liked okra in the past but loved it the
way I made it because he could actually
taste the vegetable.
