A popular dish in the northwest Indian
state of Rajasthan, panchratna dal is as
wholesome as it is delicious. It’s a
combination of five lentils, four of them
in their healthiest form—whole rather
than split. I like making this with a tiny
bit less water than my other lentil
preparations, so that it has the
consistency of a hearty stew or chili.
Serve it up Indian style or sprinkle a
little grated cheese over it and put it
out over a bed of tortilla chips.
