Sweet and Sour Sweet Potatoes

This dish is traditionally made with an
Indian-style pumpkin that is green on
the outside and slightly orange on the
inside. It’s absolutely delicious. Sweet
potatoes have a similar texture and
taste. Substitute winter squash or
pumpkin for the sweet potato and it will
be just as delicious—all at once sweet,
sour, and spicy.


2 tablespoons oil


½ teaspoon fenugreek seeds


1 large sweet potato, peeled and cubed
(4 cups [600 g])
