pepper, stem removed


2 cloves garlic, peeled and trimmed


2 tablespoons jaggery (gur) or brown
sugar


1 teaspoon coarse sea salt


3 tablespoons (45 mL) distilled white
vinegar


2 tablespoons sesame or peanut oil



  1. Soak the red chiles in boiled water to
    soften for about 10 to 15 minutes.

  2. In a regular blender, food processor,
    or a more powerful blender, such as a
    Vitamix, combine all the ingredients
    except the oil and process until smooth.
    Transfer the mixture to a small bowl.
