- Add the onion-tomato mix, along with
the cardamom and cloves, and bring to a
boil. Reduce the heat and simmer for 15
minutes. Put a lid on the pan; it will
splatter like spaghetti sauce as it
thickens. - Meanwhile, in a separate frying pan,
heat the remaining 2 tablespoons of oil. - Carefully use tongs to transfer the
marinated pieces of seitan to the pan.
Cook for 2 to 4 minutes on each side,
browning them slightly. Turn off the heat
when the seitan is finished cooking.
(You can add any soy-yogurt marinade
remaining in the bowl to the simmering
masala.) - Once the masala has finished
