little black salt or blend it into a
smoothie. The best way to use amla in
your dishes is to add about a half-dozen
dried pieces to the lentil and bean
recipes featured in the Slow-Cooked
Legumes to Stovetop section. You’ll
infuse them with a rich, healthy dose of
Vitamin C; enhance their flavor; and add
a little sourness, which always works
well in Indian dishes. Be sure to
carefully monitor the salt level in your
dish if you can only find dried and salted
amla, but it likely won’t make too much
difference in the final dish. Amla is also
used to make many cosmetic products,
including hair oils and face masks. I’ve
