turmeric, red chile powder, and garam
masala and mix until blended.



  1. With your hands, form the mixture into
    small balls, flatten them into patties, and
    set them aside on a tray.

  2. Lightly oil a griddle or frying pan and
    heat the patties until browned on both
    sides, about 4 or 5 minutes per side,
    over medium heat. It helps to put a lid on
    the pan and occasionally press down on
    the patties with a spatula to allow them
    to cook through. Alternatively, these
    veggie patties are hearty enough to cook
    on a grill. They become slightly crisp on
    the outside and remain soft and moist on
    the inside.
