3–6 green Thai, serrano, or cayenne
chiles, stems removed
1 teaspoon coarse sea salt
1 teaspoon red chile powder or cayenne
1 teaspoon jaggery (gur) or brown sugar

- Combine all the ingredients in a
regular blender, food processor, or a
more powerful blender, such as a
Vitamix, and process until smooth. If you
want to make your chutney a little
