1 (1-inch [2.5-cm]) piece ginger root,
peeled and grated or minced
2 cloves garlic, peeled and grated or
minced
3 whole cloves
1 green cardamom pod, lightly crushed
1 (3-inch [7.5-cm]) cinnamon stick
1 pinch garam masala
1 pinch red chile powder or cayenne
1 pinch coarse sea salt
- In a heavy, deep pan over medium-
high heat, combine all the ingredients
except the salt. Bring to a boil, stirring
to dissolve the sugar.
