Peach Chutney

This chutney is dedicated to my dear
friend Rekha Rao, who helped me come
up with the spice blends. Inspiration
struck one afternoon when I was
experimenting with my newly
purchased serrated peeler. Rekha hates
peach fuzz, and once she started using
my new gadget, she couldn’t control
herself. When every peach on my
counter was peeled, an idea was born.
This chutney is light—almost airy. It’s
perfect paired with a flavorful savory
main dish like tempeh or seitan. Or
maybe over some vanilla tofu ice
cream?
