and simmer for 5 minutes. At this point,
the tomatoes will break down and the
mixture will thicken slightly. Add the
lemon juice. Eat as a side just like this,
or try blending it.
- If blending, add the mixture to the jug
of a blender or a more powerful blender,
such as a Vitamix, and blend on high
until completely smooth. Serve as a side
to a meal, with veggie burgers, or even
with mock eggs. It’s also delicious
spread on toast and eaten with samosas
and other Indian snacks. I’ll sometimes
mix it into plain, cooked brown or white
basmati rice for a little added flavor.
