Grated Daikon with Ginger

Whenever we have a meal during an
Indian festival, including Diwali, my
mother-in-law avoids serving onions
for religious reasons. Instead, she
serves this chutney, which is more like
a salsa. We absolutely love it.


4 large daikon radishes, peeled, grated,
and squeezed to remove any excess
water


1 (2-inch [5-cm]) piece ginger root,
peeled and cut into matchsticks


½ teaspoon coarse sea salt


½ teaspoon ground black pepper
