Paleo Turkey Fajitas


Fajitas have become a favorite food for many families. The
Paleo-perfect ingredients in this recipe allow you to enjoy
the flavors of Mexico in a healthy way. SERVES 4


4 tablespoons extra virgin olive oil
2 garlic cloves, crushed
2 tablespoons freshly squeezed lime juice
1 teaspoon chili powder
1 teaspoon ground cumin
1½ pounds turkey cutlets, cut into ½-inch strips
1 small yellow onion, cut into 8 wedges
1 red bell pepper, cut into ½-inch strips
1 yellow bell pepper, cut into ½-inch strips
¼ cup chopped cilantro
1 small bunch scallions, thinly sliced

Combine 2 tablespoons of the oil with the garlic, lime, chili
powder, and cumin in a large bowl. Add turkey and mix
well. Cover and refrigerate for at least two hours. Remove
