Heat the remaining 2 tablespoons of olive oil in a cast iron
skillet over medium flame. Add onion and peppers and
cook for ten minutes, stirring occasionally. Toss in turkey
and cook for ten minutes, stirring continuously.


Scatter with cilantro and sliced scallions. Serve topped with
guacamole.
