Bison Wild Burgers


Who needs fast food when these tasty burgers are being
served up? Slather with Paleo condiments (see chapter 11)
and wrap in lettuce leaves, and you will be in burger
heaven. SERVES 4


2 tablespoons extra virgin olive oil
1 medium yellow onion, diced
1 fennel bulb, fronds removed, cored and diced
1 medium tomato, seeded and diced
1½ pounds ground bison
1 omega 3 egg
4 large Bibb or butter lettuce leaves
1 large red heirloom tomato, thickly sliced

Preheat oven to broil.


Heat oil in a cast iron skillet over medium flame. Add onion
and fennel and sauté for five minutes. Toss in diced tomato
and continue to sauté for three minutes. Remove from
flame and set aside to cool for ten minutes.
