Wax Gourd, Shiitake Mushroom & Pork Soup

Ingredients:
6 medium sized Dried Shitake Mushrooms
1 cup chopped Wax Gourd, peeled and seeded
1 piece Lean Pork (2 ounces), shredded
Salt & Sesame Oil to taste
Directions:
- Preserve shredded pork in salt and sesame oil for 10 minutes
- Clean dried shiitake mushrooms with a soft brush and soak them with warm water for
half an hour, then finely slice them - Place wax gourde and mushrooms in a pot with 1 cup of water
- Bring to a boil
- Reduce heat and simmer, partially covered, for 10 minutes
- Add pork
- Cook for another 10-15 minutes
- Add salt and sesame oil
- Serve warm
