Pumpkin Porridge

Ingredients:
1 lb Spare Ribs
7 Ginkgo Seeds, peeled
5 thin slices Fresh Ginger Root
1 Tbsp Cooking Wine
1 Tbsp Chopped Scallions
Salt to taste
Directions:
- Wash and dry spare ribs and chop them into 2 x 2 inch chunks
- Place spare rib chunks, cooking wine, ginger slices and 2 cups of water in a pot
- Bring to a boil
- Reduce heat and simmer, partially covered, until spare ribs are very tender (60-90
minutes) - Add ginkgo and cook for another 15 minutes
- Add salt and scallions
- Serve soup warm
