Satisfying Hunger with


a Sandwich or Wrap


Sandwiches are classic lunchtime food, whether warm or cold. A hot toasted
sandwich is always a satisfying treat on a leisurely weekend day. Wraps,
which are often like sandwiches but with a tortilla instead of bread, are
perfect for toting with you for workday lunches. In this section we give you
both kinds of recipes to help get you through the day.

Tuna Melt


Tuna salad is always popular after surgery because tuna is generally well tolerated by
the pouch. This is not your ordinary tuna salad. The flavors mingle perfectly together,
and when topped with ripe, juicy tomatoes and Gouda cheese and melted, your taste
buds are in for a treat.

Stage: Regular foods
Preparation time: 10 minutes

Cooking time: 5 minutes
Yield: 4 servings (^1 ⁄ 4 cup tuna salad per serving)

One 6-ounce can tuna in water, drained
2 tablespoons light mayonnaise
1 teaspoon lemon juice

(^1) ⁄ 4 teaspoon Worcestershire sauce
2 tablespoons minced celery
1 tablespoon minced onion
2 teaspoons chopped fresh parsley
(^1) ⁄ 8 teaspoon black pepper
4 slices rye bread
8 slices tomato
(^1) ⁄ 4 cup shredded Gouda cheese
1 Preheat the oven broiler. In a bowl, mix the tuna, mayonnaise, lemon juice,
Worcestershire sauce, celery, onion, parsley, and pepper.
2 Place the rye bread slices on a baking sheet and broil 1 minute, or until lightly toasted.
Remove from heat and spread with the tuna salad.
3 Place 2 slices of tomato on top of each tuna salad and then top with 1 tablespoon of
shredded cheese. Return the open-faced sandwiches to the preheated oven and broil
for 2 to 3 minutes, until cheese is melted.
