If you have an adjustable gastric band (AGB), ground meats generally work
better than a solid piece of meat. Grinding meat breaks down its fibers so it’s
less likely to get lodged trying to pass through the band. But even with ground
meats, be sure to chew, chew, chew.


Salisbury Steak with


Sautéed Vegetables


Salisbury steak originated in the United States before 1900, long before frozen dinners in
aluminum trays were invented. It’s usually made from ground beef and served with a gravy.
We’ve taken a different twist here by adding onions to the dish and red wine to the sauce.

Stage: Soft foods
Preparation time: 10 minutes

Cooking time: 20 minutes
Yield: 6 servings (1 cup each)

1 pound lean ground beef

(^1) ⁄ 4 cup fresh minced parsley
2 tablespoons chopped green onion
(^1) ⁄ 2 teaspoon salt
(^1) ⁄ 2 teaspoon black pepper
(^1) ⁄ 4 cup plus 1 teaspoon all-purpose flour
1 tablespoon olive oil
1 cup sliced onion
1 cup sliced green bell pepper
1 cup chopped tomatoes
1 tablespoon minced garlic
1 tablespoon tomato paste
2 cups low-sodium beef broth
(^1) ⁄ 4 cup dry red wine
(^1) ⁄ 2 teaspoon dried thyme
1 Combine the ground beef, parsley, green onion, salt, and pepper in a mixing bowl.
Divide evenly into 4 equal portions and shape each into a^3 ⁄ 4 -inch thick patty.
2 Place^1 ⁄ 4 cup flour into a shallow dish and dredge each patty in flour.
3 Heat oil in a medium sauté pan over medium-high heat. When oil is hot, add patties and
sauté 3 minutes on each side or until browned; remove from pan.
4 Add the onion, green pepper, and tomatoes to pan and sauté for 5 minutes. Stir in garlic
and tomato paste and cook for 1 minute.
5 Sprinkle the onion mixture with 1 teaspoon flour and cook for 1 minute. Stir in the broth
and wine; then add thyme. Return meat patties to the pan and bring broth to a boil.
6 Reduce heat to medium low, cover, and simmer 10 minutes. Note: Sauce will be thin like soup.
