Taco Salad.......................................................................................................................


Why use a taco seasoning packet when you can make you own from scratch? This is
perfect for lunch or dinner, and the extra taco meat can be frozen and used when you’re
craving a taco salad. Taco meat is great after weight loss surgery. It has a lot of flavor,
and because it’s crumbly, it’s not likely to get stuck.

Stage: Regular foods
Preparation time: 20 minutes

Cooking time: 10 minutes
Yield: 4 servings (1 cup each)

1 pound lean ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
2 teaspoons chili powder

(^1) ⁄ 2 teaspoon salt
(^1) ⁄ 2 teaspoon black pepper
1 tablespoon corn starch
(^1) ⁄ 2 cup water
2 cups chopped lettuce
4 teaspoons shredded low-fat cheddar cheese
4 teaspoons sliced black olives
4 teaspoons chopped tomatoes
4 teaspoons mild salsa
1 In a medium skillet, sauté the ground beef over medium-high heat until no longer pink,
approximately 5 minutes. Drain the fat from meat. Return the pan to heat and add garlic
powder, onion powder, cumin, chili powder, salt, and pepper to the meat.
2 In a small bowl, mix the cornstarch and water. Add to the pan and sauté for 3 minutes.
3 To plate the salads, place^1 ⁄ 2 cup of warm taco meat in the center of each dish. Top each
with^1 ⁄ 2 cup lettuce and 1 teaspoon each of cheese, olives, tomatoes, and salsa.
