Pork Stir-Fry


With fresh spinach and hoisin-marinated pork, this stir-fry is packed with flavor and
absolutely delicious. Hoisin sauce isn’t soy sauce. It’s both sweet and salty and used
most often as a glaze for meats. You may not think of angel-hair pasta and Asian food
going together, but angel hair is similar to lo mein noodles, and when you use whole-
wheat noodles you get more fiber.

Stage: Regular foods
Preparation time: 5 minutes

Marinating time: 10 minutes
Cooking time: 15 minutes

Yield: 6 servings (^1 ⁄ 2 cup each)

(^1) ⁄ 4 cup hoisin sauce
1 tablespoon water
2 cloves garlic, crushed
2 tablespoons low-sodium soy sauce
1 teaspoon sesame oil
(^1) ⁄ 4 teaspoon red pepper flakes
1 pound pork loin, cut into thin strips
8 ounces cooked whole-wheat angel hair pasta
5 cups fresh spinach, rinsed and stems removed
8 ounces canned sliced water chestnuts,
drained
(^1) ⁄ 4 cup chopped green onion
1 To make marinade, combine hoisin sauce, water, garlic, soy sauce, sesame oil, and red
pepper flakes in a medium bowl and mix well.
2 Pour half of the marinade over the pork, cover, and marinate in refrigerator for 10 minutes.
Reserve remaining marinade.
3 Remove the pork from marinade and discard used marinade.
4 Heat a large sauté pan over medium-high heat. Add pork and stir-fry for 4 minutes.
Remove the pork from sauté pan and cover to keep warm.
5 In the same pan, combine pasta, spinach, water chestnuts, green onions and the other
half of the reserved marinade. Cook until spinach is wilted and mixture is heated
through, stirring occasionally, about 2 minutes.
6 Return the pork to sauté pan and mix lightly before serving.
