Angel Hair and Salmon with
Spicy Basil Sauce
The fresh jalapeños kick this dish up a spice notch, and the half-and-half pulls the sauce
together. Salmon is a rich source of omega-3 fatty acids, the heart-healthy fat. Wild-
caught salmon, though more expensive, is higher in omega-3 and vitamin D.

Cooking time: 20 minutes
Yield: 3 servings (1 cup each)
1 tablespoon butter
8 ounces fresh salmon, boned and skinned
1 small onion, minced
1 teaspoon chopped fresh jalapeño pepper,
seeds and veins removed
1 medium tomato, chopped
(^1) ⁄ 4 cup bottled clam juice
(^1) ⁄ 4 cup dry white wine
(^1) ⁄ 2 cup fat-free half-and-half
3 tablespoons finely chopped basil
1 tablespoon finely chopped fresh parsley
(^1) ⁄ 2 teaspoon salt
(^1) ⁄ 2 teaspoon pepper
4 ounces dry whole-wheat angel hair pasta
1 Cook pasta until it is soft all the way through (not al dente). Drain and set aside.
2 Melt 1 tablespoon butter in a medium sauté pan over medium heat. When the butter
has melted, add the salmon and sauté until opaque, 2 to 3 minutes. Transfer to a plate
and cut into^3 ⁄ 4 -inch cubes.
3 Add the onion, jalapeño, and tomato to the pan and sauté for 2 minutes. Add the clam
juice and wine. Turn heat to high and boil until sauce thickens, about 5 minutes.
4 Add the half-and-half and basil to the sauté pan. Lightly simmer until the sauce thickens
again, about 5 minutes.
5 Turn the heat to low. Fold in the parsley, salt, and pepper. Add the cooked pasta and
salmon to the sauce, toss gently, and serve.
