Salmon with Honey-


Garlic-Caramelized Onions


Honey and garlic are perfect complements to salmon. Caramelizing the onions, slowly
cooking to bring out the natural sugar, gives the onions a wonderful flavor. Adding bal-
samic vinegar brings out even more flavor.

Stage: Soft foods
Preparation time: 10 minutes

Cooking time: 35 minutes
Yield: 4 servings (4 ounces each)

1 tablespoon butter
1 large onion, cut in half lengthwise, sliced,
and separated into thin rings
1 tablespoon balsamic vinegar

2 teaspoons honey
1 clove fresh garlic minced
1 pound salmon fillets cut into 4 equal pieces
Salt and pepper to taste

1 Preheat the oven to 400 degrees. Spray a baking sheet with nonstick cooking spray.


2 Melt butter in a large skillet over medium-high heat. Add onion rings to the pan.


3 Reduce heat to low and cook onion for 10 minutes, stirring frequently. Reduce heat to
low and cook for 10 more minutes. Then stir in vinegar, honey, and garlic.


4 While onions are cooking, rinse salmon and place on the prepared baking sheet.
Sprinkle both sides with a little salt and pepper. Bake for 10 to 15 minutes, depending
on thickness. Serve topped with onions.
