Sautéed Shrimp with Asparagus Tips


In this recipe shrimp and asparagus tips are cooked to tender perfection, as shown in
the color section photo for this recipe. Butter and garlic with lemon juice make a
perfect, traditional seafood sauce, and red pepper flakes pack in a lot of flavor. Even
though shrimp and asparagus can sometimes cause food sticking, using smaller shrimp
and only the tips of the asparagus reduce the chances.

Stage: Regular foods
Preparation time: 5 minutes

Cooking time: 7 minutes
Yield: 4 servings (^3 ⁄ 4 cup each)

1 tablespoon olive oil
1 cup raw asparagus tips (the top two inches
of each spear)
1 pound raw medium shrimp, peeled and
deveined (see Figure 12-1)
2 tablespoons garlic, minced

1 teaspoon red pepper flakes
1 tablespoon lemon juice
2 tablespoons white wine

(^1) ⁄ 4 teaspoon salt
1 teaspoon butter
1 tablespoon chopped fresh parsley
1 Heat the oil in a skillet over medium heat. When oil is hot, add asparagus tips and cook
for about 4 minutes.
2 Add the shrimp, garlic, pepper flakes, lemon juice, wine, and salt. Cover and cook for
3 minutes.
3 Uncover and mix in the butter. Remove from heat and mix in the parsley.
Tip: Deveining shrimp is easy: With a small sharp knife, slightly cut the top of the shrimp
from the rounded curve to the tail. Then rinse with water to wash out the vein.
