T Garlic and Herb Tofu Salad
Tofu is a great source of protein. It takes on all flavors that are added to it, so by
combining it with flavorful sautéed garlic and fresh herbs, you get a wonderful tofu
salad. In addition, tofu, garlic, and olives all contain heart-healthy compounds.

Cooking time: 5 minutes
Yield: 2 servings (1 cup each)
A vegetarian by any other name
Not all people who refrain from eating meat
follow the same diet. Following are the different
kinds of vegetarians:
✓ A lacto-ovo vegetarian consumes dairy
products and eggs but doesn’t eat meat,
poultry, fish, or seafood.
✓ A lacto-vegetarian consumes dairy
products but doesn’t eat eggs, meat,
poultry, fish, or seafood.
✓ A vegan omits dairy products, eggs, meat,
poultry, fish, and seafood — all animal-
based foods.
(^1) ⁄ 4 cup thinly sliced garlic cloves
2 teaspoons plus^1 ⁄ 2 teaspoon olive oil
11 ⁄ 2 cups firm tofu cut into^1 ⁄ 4 -inch cubes
(^1) ⁄ 4 cup quartered green olives
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh basil
4 teaspoons fresh lemon juice
1 tablespoon water
1 Place sliced garlic cloves into a small sauté pan. Add^1 ⁄ 2 teaspoon olive oil and turn heat
to medium high. Sauté, stirring constantly, until garlic is browned on both sides, about
5 minutes.
2 Place sautéed garlic and all remaining ingredients into a medium mixing bowl and toss
well.
