T Oriental Slaw


Coleslaw is tasty, but oriental slaw is better. Sprinkling with sunflower seeds and
almonds and finishing with green onions and sesame oil makes this dish impeccable.
Cabbage is a cruciferous vegetable that has been shown to reduce the risk of certain
types of cancer.
Stage: Regular foods

Preparation time: 15 minutes
Chilling time: 2 hours

Yield: 6 servings (^1 ⁄ 2 cup each)

(^1) ⁄ 4 cup green onion, sliced
2 cups finely shredded cabbage
1 cup shredded carrots
(^1) ⁄ 4 cup water chestnuts, drained and cut into
thin strips
(^1) ⁄ 4 cup julienne cut red bell pepper
(^1) ⁄ 4 cup unsalted sunflower seeds
(^1) ⁄ 4 cup sliced almonds
3 tablespoons sugar substitute
1 tablespoon sesame oil
(^3) ⁄ 4 teaspoon salt
1 teaspoon black pepper
4 tablespoons cider vinegar
Place all ingredients into a medium bowl and mix well. Refrigerate before serving.
Tip: No time to shred cabbage and carrots? Buy it already shredded and bagged in the
produce section of the supermarket.
