T Pumpkin Custard


The richness of creamy Greek yogurt and the heartiness of pumpkin go perfectly
together to make this no-bake dessert a true favorite. Plus it fits in the Stage 3 diet plan,
so you don’t have long to wait before enjoying this one!
Stage: Smooth foods

Preparation time: 10 minutes
Chilling time: 1 hour

Yield: 4 servings (^1 ⁄ 2 cup each)

1 cup pumpkin purée

(^1) ⁄ 4 teaspoon nutmeg
1 teaspoon cinnamon, divided
(^1) ⁄ 4 teaspoon ginger
2 tablespoons brown sugar
(^1) ⁄ 4 cup sugar substitute
1 cup nonfat plain Greek yogurt
2 tablespoon orange zest
1 In a large bowl combine pumpkin, nutmeg,^1 ⁄ 2 teaspoon cinnamon, ginger, brown sugar,
and sugar substitute. Mix well and set aside.
2 In another large bowl mix the yogurt and orange zest.
3 In a glass add^1 ⁄ 8 cup of the pumpkin mixture and layer^1 ⁄ 8 cup of yogurt on top. Repeat
both layers; then do the same for 3 additional glasses. Dust the tops with the remaining
(^1) ⁄ 2 teaspoon cinnamon and refrigerate for 1 hour before serving.
