Sodiumisanessentialmineralforhumanhealth.Itisneededformaintainingpropermineralbalance,

temandtheeffectivefunctioningofthebody’sorgansaswellaspropermusclefunctionandmain-
tainstheproperpH.Whenapersonhasanaccidentandthedoctorcallsfor“fluids,”thenursedoes
notbringdistilledwater,butrathera“salinesolution.”Salinesolutionisaspecialsolution,contain-
ing salt, that is isotonic with blood and is used in medicine and surgery.
Manyauthoritiesstatethatthebodyrequiressmallamounts,forexamplelessthat 500 milligramsof
sodiumperday 217 inordertoremainhealthy.Ingestionoflargeamountsofsodium,suchasthose
foundincannedfoodsorfoodspreservedwithsalt(saltedfish,etc.),canleadtohypertension,and
alsoitcanexacerbateconditionslikeheartfailure,premenstrualsyndromeandkidneydisease.Early
experimentationledtotheextremebeliefthatallsaltshouldbecutoutofthediet,andrightlysosince
theStandardWesternDietisalreadyfullofsaltfromtheadditivesbymanufacturersandcanned
goods.Sopeoplestruggledtoeattheirblandtastingfood.However,theseverylowrequirementsare
usuallyputforthinreferencetothearbitraryRDAminimumfigures.Recentexperimentshaveshown
that those low numbers are not adequate.
ArecentfouryearstudybytheprestigiousAlbertEinsteinCollegeofmedicine
(doneinassociationwiththeprestigiousCornellUniversityMedicalcollege)on
1,900menwithhighbloodpressureconcludedthathighbloodpressurepatients
whoatelessthan 5 gramsofsaltadayhadmorethanfourtimesasmanyheart
attacksasthosewhoconsumedover 10 gramsaday.Althougha“tremendous”in-
creaseinsaltcanleadtoa“small”increaseinbloodpressure,lowsodiumcauses
thelevelofrenninhormone,secretedbythekidneys,inthebloodtogoup,andren-
nin is found in high levels of patients with high blood pressure.
Thus,itistruethatlargeamountsofsaltinthedietcanbedetrimentalbutsotoocanalloftheminer-
alsandvitaminsaswellasthechemicalsinfood.Certainly,theextremeamountsfoundincanned
foodsshouldbeavoided,butsodiumneednotandindeedshouldnotbecutoutfromthedietentirely.
Somewillcomefromfoodsnaturally.Ifmoreisneededthereareviablealternativesthatthehealth
enthusiast can use as substitutes.
