Conclusion
This chapter attempts to give examples of
sensory analysis and the results obtained over
a range of different meat products. It is by no
means an exhaustive review of all meat prod-
ucts, but it does serve to indicate that no
single approach will answer questions on
composition and sensory characteristics.
Sensory properties are wide and varied across
these very different products. It is therefore
necessary at the onset to understand the ques-
tions that are being asked.
