1 ripe avocado, sliced
2 tablespoons chopped fresh dill
Salt and pepper
- Poach the eggs (see Eggs “Benefit,” page 215).
- Place a piece of salmon on top of each slice of toasted Manna bread.
- Place sliced avocado on top of the salmon, top the avocado with the
eggs, and sprinkle with dill, salt, and pepper.

Leeks are the secret ingredient in this flavorful soup.
SERVES 2
3 leeks, chopped
2 tablespoons extra virgin olive oil
3 cups chicken broth
4 celery stalks, chopped
2 cups cauliflower florets
2 garlic cloves, chopped
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh basil
1 6-ounce cod fillet, cut into small pieces
Salt to taste
Pinch of cayenne
Chopped fresh parsley
- Sauté the leeks in the olive oil for 5 minutes.
- Add^1 ⁄ 4 cup of the chicken broth, celery, cauliflower, garlic, and
herbs; cover and cook for 10 minutes.
- Add the cod and the rest of the chicken broth, and simmer for 30
minutes.
- Add salt and cayenne, and serve garnished with parsley.
