Here’s a leaner version of a traditional favorite. Buffalo meat has a light,
delicate flavor and is much lower in saturated fat than beef. Buffalo
meat is sold at butchers, many supermarkets, and health food stores.
SERVES 2
1 pound buffalo stew meat
(^1) ⁄ 4 cup flour
3 tablespoons extra virgin olive oil
2 medium onions, chopped
3 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
1 quart beef stock
1 quart water
2 turnips, cut into chunks
5 celery stalks, chopped
5 carrots, cut into rounds
5 garlic cloves, chopped
(^1) ⁄ 2 head green cabbage, thinly sliced
1 teaspoon salt
(^1) ⁄ 4 teaspoon black pepper
1 cup chopped fresh Italian parsley
- Dredge the stew meat in flour, and discard the excess.
- Heat the olive oil on medium heat in a large soup pot, add the buf-
falo meat and quickly brown.
- Remove the pot from the heat, and place the meat in a separate
bowl.
- Add^1 ⁄ 4 cup of the water to the pot, return to medium heat, add the
onions, and cook until soft.
