PESTO SAUCE
2 cups chopped fresh basil
(^1) ⁄ 2 cup olive oil
(^1) ⁄ 4 cup walnuts
2 garlic cloves
(^1) ⁄ 3 cup grated Parmesan
1 boneless, skinless, chicken breast, sliced
TOPPING
2 tomatoes, thinly sliced
3 garlic cloves, chopped
1 tablespoon grated Parmesan
(^1) ⁄ 4 cup chèvre
- Preheat the grill.
- Make the crust following the directions on page 263.
- Blend the pesto.
- Grill the chicken for 10 minutes on each side, and cut into thin
slices.
- Spread pesto on the baked crust, top with the tomatoes, garlic,
Parmesan, chèvre, and chicken breasts.
- Place back in the oven for 5 minutes.
