FROM TANGERINE
If you live anywhere near Los Angeles, check out Tangerine, a fabulous
West Hollywood restaurant that offers some Rosedale Diet–approved
dishes on their menu. This is one of my favorite recipes designed by
Tangerine chef Bianca Simonian. It’s great for people who crave
mashed potatoes but don’t want to fill up on starchy carbs.
SERVES 4
1 head cauliflower, leaves and stems removed, cut into quarters
2 tablespoons crème fraîche
(^1) ⁄ 2 stick, or 4 tablespoons, sweet butter
Salt and pepper to taste
(^1) ⁄ 2 cup almonds, finely ground in a blender
(^1) ⁄ 2 cup green onions, sliced thin



  1. Preheat the oven to 400°F.

  2. Boil water in a large sauce pan. Place the cauliflower in the boiling


water and cook until soft.


  1. Remove the cauliflower from the water, drain, and place in a bowl.


Using a hand mixer, add crème fraîche, butter, salt, and pepper to
the cauliflower. Whip until the cauliflower is smooth, or has the con-
sistency of mashed potatoes.


  1. Drain the cauliflower mixture in a finely meshed strainer to remove


excess water. (If you don’t have a strainer that is fine enough, strain
the cauliflower through a coffee filter.)


  1. By hand, mix in the nuts and green onions.

  2. Grease a ring mold with butter. Add the cauliflower mixture.

  3. Bake for 6 to 10 minutes, until the cauliflower is golden brown on


top.
