■ ■ ■ (^) ROASTED RED BELL PEPPER DIP
1 red bell pepper
(^1) ⁄ 4 cup pine nuts
1 garlic clove
2 tablespoons olive oil
1 teaspoon rosemary



  1. Roast the pepper.

  2. Blend all the ingredients in a food processor.


■ ■ ■ (^) OLIVE TAPENADE
1 cup pitted Kalamata olives
2 tablespoons feta
2 tablespoons olive oil
(^1) ⁄ 2 cup fresh basil



  1. Blend all the ingredients in a food processor.

  2. Spread on “Manna from Heaven” bread; dip with cucumber rounds.


■ ■ ■ (^) SALMON SPREAD
3 ounces smoked salmon
2 tablespoons low-fat cream cheese
(^1) ⁄ 4 cup fresh basil
1 tablespoon fresh dill
1 garlic clove
1 tablespoon chopped walnuts
Blend all the ingredients in a food processor.
