1 head Bibb lettuce, washed and dried

  1. Gently mix and serve over a bed of lettuce.

This sweet and tangy marinade imparts a lovely flavor to fresh tuna.
Grilling the fish adds even more depth.
SERVES 2
MARINADE
1 cup orange juice
1 teaspoon orange zest
2 tablespoons tamari
3 tablespoons fresh lime juice
2 6-ounce tuna steaks (one is for Maui Salad, page 226, tomorrow)
(^1) ⁄ 2 cucumber
(^1) ⁄ 4 cup chopped walnuts
1 head Bibb lettuce
1 endive, cut into thin rounds
3 tablespoons dulse seaweed (available at health food stores)
TAR T VINAIGRETTE
(^1) ⁄ 2 cup extra virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons umeboshi plum vinegar
1 tablespoon chopped fresh rosemary
Dash of tamari
Stevia powder to taste
