the pot, and serve with salad.
MESCLUN SALAD
2 cups mesclun greens
1 ripe avocado, peeled and cut in chunks
(^1) ⁄ 2 green apple, thinly sliced
(^1) ⁄ 4 cup chopped almonds
2 teaspoons grated Parmesan
BASIL VINAIGRETTE
(^1) ⁄ 2 cup extra virgin olive oil
2 tablespoons balsamic vinegar
(^1) ⁄ 2 cup chopped fresh basil
Stevia powder to taste
Salt to taste
- Mix the vinaigrette in a blender.
- Add mesclun greens, avocado, apple, almonds, and Parmesan to a
salad bowl.
- Pour the dressing over the salad. Toss well and serve.
