  1. Wash the beans well in a colander.

  2. Melt the ghee in a large saucepan, add the garlic and ginger, and


sauté for 2 minutes.


  1. Add the water, beans, turmeric, and garam masala, and simmer for 1


hour.


  1. Add the parsley, salt, and cayenne, puree half of the soup, return to


the pot, and serve with salad.

MESCLUN SALAD


2 cups mesclun greens
1 ripe avocado, peeled and cut in chunks

(^1) ⁄ 2 green apple, thinly sliced
(^1) ⁄ 4 cup chopped almonds
2 teaspoons grated Parmesan
BASIL VINAIGRETTE
(^1) ⁄ 2 cup extra virgin olive oil
2 tablespoons balsamic vinegar
(^1) ⁄ 2 cup chopped fresh basil
Stevia powder to taste
Salt to taste



  1. Mix the vinaigrette in a blender.

  2. Add mesclun greens, avocado, apple, almonds, and Parmesan to a


salad bowl.


  1. Pour the dressing over the salad. Toss well and serve.
