- Return the broth to the heat and bring to a boil.

CITR US VINAIGRETTE
(^1) ⁄ 2 cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon fresh lime juice
(^1) ⁄ 4 cup fresh chopped mint
Stevia powder (or other sugar substitute) to taste
3 cups baby romaine lettuce, washed and dried
1 celery stalk, chopped
(^1) ⁄ 2 yellow bell pepper, cut in strips
1 small head radicchio, washed and sliced
(^1) ⁄ 2 cup pecans
- Mix the vinaigrette in a blender.
- Put the rest of the ingredients in a salad bowl, add the dressing, toss,
and serve.
