Add a little spice to your chicken salad!
SERVES 2
2 cups chicken from Gingery Chicken Soup (page 231), cut into bite sized pieces
1 celery stalk, chopped
3 tablespoons chopped almonds
(^1) ⁄ 2 green apple, chopped
1 scallion, chopped
2 tablespoons homemade mayonnaise
Pinch of cayenne
Salt to taste
1 small head green leaf lettuce, washed and dried
- Mix all the ingredients (except for the lettuce).
- Serve over a bed of greens.

These salmon cakes are a fabulous way to get your omega-3 fatty acids
and still eat like a gourmet. They certainly are delicious.

SALMON CAKES
6 ounces raw salmon, cut into small cubes
1 egg
(^1) ⁄ 3 cup ground walnuts (blended in a food processor)
(^1) ⁄ 2 cup chopped fresh Italian parsley
(^1) ⁄ 4 teaspoon salt
Pinch of cayenne
