2 sprigs fresh thyme
12 sprigs Italian parsley
2 sprigs fresh sage
3 medium leeks, chopped
4 garlic cloves, peeled
3 stalks celery, cut into 2-inch chunks
2 turnips, quartered
2 tablespoons butter
(^1) ⁄ 4 teaspoon salt
Pinch of black pepper
- Preheat the oven to 425°F.
- Stuff each hen with 1 lemon wedge and a small bundle of rosemary,
thyme, parsley, and sage.
- Place the hens in a roasting pan and arrange the leeks, garlic, celery,
and turnips around them.
- Put several dots of butter on top of each hen, sprinkle with salt and
pepper, and place in the oven.
- Turn the oven down to 350°F and bake for 1 hour, or until juices run
clear.
