240 ■^ Rosedale Diet Recipes


2 sprigs fresh thyme
12 sprigs Italian parsley
2 sprigs fresh sage
3 medium leeks, chopped
4 garlic cloves, peeled
3 stalks celery, cut into 2-inch chunks
2 turnips, quartered
2 tablespoons butter

(^1) ⁄ 4 teaspoon salt
Pinch of black pepper



  1. Preheat the oven to 425°F.

  2. Stuff each hen with 1 lemon wedge and a small bundle of rosemary,


thyme, parsley, and sage.


  1. Place the hens in a roasting pan and arrange the leeks, garlic, celery,


and turnips around them.


  1. Put several dots of butter on top of each hen, sprinkle with salt and


pepper, and place in the oven.


  1. Turn the oven down to 350°F and bake for 1 hour, or until juices run


clear.

SERVES 2
DRESSING
(^1) ⁄ 2 cup extra virgin olive oil
2 tablespoons balsamic vinegar
(^1) ⁄ 2 teaspoon Dijon mustard
Salt to taste
Stevia powder (or other sugar substitute) to taste
