1 bunch arugula, washed and dried

(^1) ⁄ 4 cup slivered almonds
(^1) ⁄ 4 cup Parmesan (shaved with a carrot peeler)



  1. Mix the dressing in a small bowl with a fork.

  2. Combine the arugula, almonds, and Parmesan in a salad bowl, toss


with dressing, and enjoy.

■ ■ ■ (^) SMOOTHIE WITH HAZELNUTS
A great variation on a familiar theme
SERVES 2
2 scoops whey protein powder
1 teaspoon flax oil
(^1) ⁄ 4 cup hazelnuts, skinless
(^1) ⁄ 2 cup strawberries, washed, with tops removed
16 ounces pure water
Pinch of cinnamon
Mix all the ingredients in a blender.

This is a really great main course salad. The combination of macadamia
nuts, avocado, and Jarlsberg cheese (my favorite) makes this salad some-
thing really special.
SERVES 2
1 head romaine lettuce, washed and dried
1 hard-boiled egg, chopped
