TUNNY FISH
The consistency of fresh tunny
fish is not unlike that of veal. It
does not often appear in England,
although I have seen it in the shops
once or twice. In the south of
France it is plentiful and very
cheap.
The best way to cook it is to cut
it into thick slices, like a salmon
steak, and sauté it in oil or butter,
